This drink, called Tarkhuna, is made from sweet tarragon concentrate and has a light green color. In Iran, tarragon is used as an addition to sabzi khordan (fresh herbs) or in Persian-style stews and marinades, especially khiar shoor (pickled cucumbers). In Slovenia, tarragon is used in a variation of the traditional sweet nut cake called potica.
