White pepper, like black pepper, is made from the berries of the pepper plant, also known as Piper nigrum. Unlike black pepper, white pepper comes from fully ripe berries. These berries are then fermented in water, and the outer layer is finally removed, leaving only the inner seeds. White pepper is more delicate than black pepper, yet has a sharp and spicy flavor and a relatively mild aroma.
