Berries
The berries are commonly used in Persian cuisine, for example in rice pilafs (known as zereshk polo) and as a condiment for poultry. Due to their inherent sourness, they are sometimes cooked with sugar before being added to Persian rice. Iranian markets sell dried zereshk. In Russia, they are sometimes used in jams (especially those made with mixed berries), and their extract is a common flavoring for soft drinks and candies/sweets.
