Fenugreek is an annual plant in the legume family (Fabaceae) with leaves consisting of three small, obovate or oblong leaflets. The cuboidal seeds, ranging in color from yellow to amber, are widely used in the cuisine of the Indian subcontinent. Fenugreek is used both whole and in powdered form to prepare pickles, vegetable dishes, dal, and spice mixtures such as panch phoron and sambar powder. To reduce bitterness and enhance flavor, the seeds are often roasted before use.
